Handforged gyuto chef knife. Made from carbon mono steel.

A heavy weight gyuto, with a slightly shorter blade and a bit more belly than standard. Designed as a bit more of a workhorse like the santoku, but with a slightly more delicate tip. This knife has a robust handle and good knuckle clearance.

The slightly larger handle on this knife means it sits in the hand really well, allowing for a variety of grips. With its weight the heel is really effective at going through tougher veg. Best suited for veg & boneless proteins. Not suitable for deboning due to its hardness at 62hrc.

Natural wood, wa style handle of local Holly wood, identified by its ivory like appearance. With a contrasting blackwood collar and octagonal shape providing a comfortable but secure grip. Blade is set with a soft glue that can be removed with heat for handle changing but still remains incredibly strong and durable.

It is a carbon steel blade, so over time will develop its own unique patina and colouring, this is normal, and reflects your cooking habits. It will require some basic care. It is a unique handmade item, and has signs of this, please make sure you examine the photos closely.
